Happy Fall! Treat Yourself to a Sweet Fall Dish

Happy Fall!! I must say it’s a season that I enjoy because of the seasonal fruits and veggies, the crisp air, football, Halloween, and hearty food! Speaking of seasonal fruits and veggies, try this Acorn Squash and Fig recipe!

Squash is one of those vegetables that provides you with an excellent source of beta-carotenes – what causes squash to have it’s traditional orange or yellowish color – Vitamin A, B and C,  as well as potassium, fiber, and folate, all which benefit the immune system, heart and eyes. Figs (think of the infamous Fig Newton cookie), dried or fresh, seem to becoming more and more popular these days! Just like squash, figs have great health benefits as well, and provide us with a good source of fiber, iron, calcium, and potassium, and research shows that they help prevent cancer, heart disease, and even may help those with diabetes and insulin production.

Brown Sugar and Fig Stuffed Acorn Squash

  • 1 medium acorn squash, alice top off seeded and cleaned
  • 4 Brown Turkey figs, washed then sliced
  • 1/4 teaspoon nutmeg
  • 2 Tbsp brown sugar
  • 2 Tbsp margarine
  • pinch of salt

Directions:

1) Slice the top of the acorn squash, and scoop the seeds out. Place squash in medium baking pan and season the inside with some salt. If your squash is hard as a rock, you can place it in the microwave for 1 minute to soften it up a bit. Cover with foil and bake at 350 degrees for 30 minutes.

2) While squash is in the oven –In a small saucepan, melt margarine over low heat, then stir in the figs, brown sugar and nutmeg.  Add this filling to the acorn squash and bake, uncovered, for about 20 more minutes. The squash should be tender and the filling bubbly. Scrape the sides of the squash to mix with the filling.
